3, 1, and 4, the three most noteworthy figures of π (pi), has been celebrated in many ways around the world. And with the date representing the first 3 digits of π (pi), March 14 is recognized as National Pi Day. π (pi) is a constant number, meaning that for all circles of any size, π (pi) will always be the same. Represented by the Greek letter “π”, it is also sometimes spelled out as “pi” (/paɪ/). And just in case you needed another reason to celebrate today, March 14 also happens to be Albert Einstein’s birthday.
However, if math is not your cup of tea, don’t worry, Pi Day is not just celebrated by mathematicians. Foodies around world mark Pi Day with their favorite pie recipes, and from my kitchen to yours, here are two favorites, a Baileys Irish Cream Chocolate Mousse Pie, and a Banana Pie. Happy Pi(e) Day!
Baileys Irish Cream Chocolate Mousse Pie
INGREDIENTS:
1 (6 ounce) chocolate crumb crusts, ready crust
1 (1/4 ounce) envelope unflavored gelatin
1 teaspoon vanilla
3/4 cup milk (whole or 2%)
3/4 cup Baileys Irish Cream
6 ounces semi-sweet chocolate chips
2 cups frozen whipped topping
INSTRUCTIONS:
Pour the milk into a medium saucepan & sprinkle the gelatin over top. Let it sit for 1 min & then stir over LOW heat until the gelatin dissolves (about 4-5 minutes)
Add the chocolate and continue to stir until melted
Stir in the vanilla
Remove from heat and stir occasionally for about 5 minutes
Stir in the Baileys Irish Cream
When mixture forms mounds when dropped from a spoon, fold in whipped topping and turn into crust
Garnish with whipped topping and shaved chocolate curls if desired
Chill at least 4 hours before serving.
Banana Pie
INGREDIENTS:
Pie crust
3 ripe bananas
2 cups of milk
2 heaping spoon of cornstarch
2 eggs
3 heaping tablespoons sugar
1 teaspoon vanilla
Whipped Cream
INSTRUCTIONS:
Line pie plate with your favorite crust and bake to a light brown
Cover with a thick layer of slice ripped bananas
Pour over the following hot custard recipe over the thick slices of bananas.
Custard Recipe:
To 1 ¾ cups boiling milk, add 2 heaping tablespoons of cornstarch or 4 tablespoons flour, dissolved in ¼ cup cold milk; 2 eggs and 3 heaping tablespoons sugar. Cook in double boiler until thick. Add Vanilla.
Place in refrigerator until set
Serve cold topped with whipped cream
